Valley Café is a Mexican American food restaurant passing Las Cruces New Mexico in the small town of Hatch. The owner of this popular restaurant in the community is, Jesusita Lara. I had the privilege to interview the owner of Valley Café and learn about the foundation of this legacy.
The valley Café restaurant at Hatch New Mexico had been around by previous owners. Whoever rented the space for the restaurant under that name, would run it. Jesusita Lara opened the restaurant on September 1st 2006. She mentions that by a matter of time she registered the restaurant’s name “valley café” under her name. this making her the legitimate owner of valley café. Recently on sept. 2016 the restaurant celebrated its tenth year anniversary under her ownership.
All great owner has an inspiration that sparked the beginning of it all. the owner of valley café mentioned Her inspiration to begin a restaurant, was influenced by a close friend of hers who encouraged her to open a restaurant which would be owned by both of them. Mrs. Lara, the owner, agreed to this significant plan, and mentions that shortly due to circumstances she was left on her own. Shortly After approximately three months, her friend backed out from the business. however, this was certainly not holding Mrs. Lara back” Í had always worked on restaurants, I know a lot about the business itself, and it helps that I love cooking”.

How do you feel of owning an almost five star restaurant? The owner mentioned feeling grateful for the publicity her own clients have given her throughout the years. “Thanks to them, my restaurant is popular, I always try and send the clients leave satisfied by our service as we make sure it’s always a top service”.

Jesusita responded, “Yes, I do see myself adding another restaurant elsewhere in the future so people can taste my dishes’”
